Vegan cake with plum oil
Plum oil and plum flour give this cake extraordinary marzipan like flavour
For all sweets lovers, here is the recipe:
- 1 ripe banana
- 2 apples
- 20 g of vanilla sugar
- 200 g sugar
- 200 ml sparkling mineral water
- 100 ml plum oil
- 300 g flour
- 100 g plum flour
- 10 g of baking powder
- ½ tea spoon cinnamon
- Chocolate, hazelnuts, walnuts, dried fruits -as per taste around 150 g
- Cocoa powder as per taste
Peel apples and banana, cut and blend until smooth. Add sugar and vanilla, mix with spoon; then add mineral water and oil. To the liquid mixture add flours (cocoa powder), baking powder, cinnamon. When you get the smooth mixture add other ingredients as per your own taste.
Bake in the oven for about 50-55 minutes at the temperature of 180°C. Check with toothpick if the cake is done. Leave the cake in the mold for 15 minutes to cool down.
Note: You may cut down the quantity of plum oil added and replace it with other oil, but the cake will slightly loose marzipan taste. Do not cut down the total quantity of oil.
